High Protein No Bake Cookie Bars

One of oldest sons autistic quirks is that he is a very picky eater. He eats what I like to call the ‘Beige Diet’ with the top of his food pyramid being chicken nuggets - specifically the dino shaped one - and chips. So getting protein in his diet, especially in an on-the-go snack form is NOT easy!
When I first created these no bake bars I didn’t have high hopes that he would even lick them let alone eat them! But despite my reservations he tried one and he ended up LOVING them! With 12grams of protein in each little bar this is an absolutely must for my weekly meal prep and thankfully the recipe is super simple!
Let’s get started!
Mix together Almond Flour, protein powder, maple syrup & peanut butter in a large bowl. This is the base for your cookie bars.
Hint: Warm peanut butter up in the microwave to make it easily pourable!
Add in chocolate chips and gently fold into ‘batter’.
In a square baking dish, press mixed to fit pan using a spatula (or if you’re like me use clean hands to gently press in)
In a separate measure cup combine chocolate chips and vegetable oil and melt in the microwave.
Take chocolate spread and pour over cookie dough base and spread gently to cover entire cookie dough base.
Put into fridge for 2-3 hours or until hardened. Cut into 9 equal bars and enjoy!
Cookie Dough Base Ingredients
1.5 cups peanut butter
1/2 cup of vanilla protein powder, I use this one
1/2 cup of almond flour
1/4 cup of maple syrup
1/3 cup of chocolate chips
Topping Ingredients:
1 cup chocolate chips
2 tbsp vegetable or coconut oil
Directions
In a large mixing bowl, combine peanut butter, protein powder, almond flour and maple syrup.
Gently fold in chocolate chips
In measuring cup, melt chocolate chips with oil. I just stick it in the microwave for 20-30 seconds depending on how powerful your microwave is!
In a 9x9 baking dish, lined with parchment, gently press cookie dough base in to fit pan
Take melted chocolate, and pour over cookie base to cover. Use spatula to spread evenly.
Refrigerate for 2-3 hours, or until hardened completely. Cut into 9 even pieces and enjoy!
